Importing goose is expensive in Singapore because of the limited AVA-approved sources. Most traditional hawkers stopped selling goose and goose eggs since a long time.

The closest to the Hong Kong style roast geese i had tasted was actually at jurong point Legendary Hong Kong, it is actually London Roast duck.

The type of geese they are allowed to import to Singapore actually does not meet the quality which the F&B outlets demand.

You can read about the restaurant http://www.straitsti...at-jurong-point

Quote "I wish Legendary serves roast goose, but it does not. Geese from China cannot be imported into Singapore and the frozen ones from Hungary that we get here do not meet the chefs' standards."

You mean the waxed goose thigh seen during CNY? Waxed Chinese sausages and waxed goose thigh used to cook claypot rice.

In the Chinese culinary or recipe I do not recall seeing roast goose(in Singapore). It's mostly roast duck. If wax goose thigh is not available ppl will use duck. Ever since the SARS incident there are very few geese available. Probably can look to Australia to supply and DIY roast it in the oven.

Last time 20 years ago, the food court at marina bay do sell roasted geese.

The last time I had in in Singapore is a few years ago at jiale roasted food at marina square food court. Even then, I had it only once because it is not on the menu. They just occasionally do it, or they are trying out new product then. A geese slightly bigger than the duck cost twice more, maybe that why it is not feasible to sell in Singapore.

Maybe you can get them to do special order for you since they reopen at another location. But not sure whether they willing or not for small volumn. Below the link.

Maybe you are too young to know Singapore used to have goose. Now the AVA-approved import sources are very limited, they are virtual extinct in Singapore.

If not wrong, because most goose like human are right handed or legged. That why the flesh on the left is more tender and fattier. I guess la.
