That's why it doesn't have a strong following in Singapore. People don't see it as authentic. As for Chicken Rice, the Singapore version is over rated. At least, I can still hunt around for the elusive hawker foods that still kept up the old standards. The now gone Newton Char Keow Teow stall is a good example. The uncle made sure he fried the keow Teow to his satisfaction and didn't care about the queue behind or maximizing his income by short cuts. Then this Char Keow Teow stall at the Seah Im Rd hawker centre did exactly the opposite. The frying took only a few seconds, and the Char Keow Teow is stilll dripping wet with the dark sweet sauce.
