1) One character morphs into a demon/monster, etc
2) The good guy/woman is being chased by the demon/monster, etc
3) The final battle between good and evil.

The plain music (no vocals) often used in Gothic settings is "Toccata and Fugue in D minor" by J. S. Bach:

 

 

Of course, both of these are *highly* cliche.
