day 4 of sourdough starter.

quiet quiet day. Apart from some broken bubbles, basically no movement, so I am just going to leave it alone until tonight, no feeding today until nearer to midnight...

2nd bake of walnut and cranberries loaf yesterday .. I increased the amount of butter and lowered the oven temp, and I like this texture much better 😆. Inside is soft and the crust is soft and chewy.

I left it to proof longer than I intended as I went grocery shopping, and it was about 1.5x the size of the 1st bake But the structure was still okay.

Many F&B closed down due to covid.

Last evening Hokkien Mee from Lorong 29 Geylang, Swee Guan. Taste is nice but the smoke/wok smell in the noodles is abit too strong. Maybe Cos it’s fried on charcoal stove?

Cant be right? Wonder whether the other East Coast Rd Lorong 29 noodles also taste like this?

That is what I like, the wok hei due to Charcoal.

Similarly, the Penang CKT at Penang New Lane that fried using Charcoal also have strong wok hei.

Haha this is just a normal meal when I go over. Dropped my kids off to visit while I go hospital
