Layangman Neutral Newbie December 13, 2007 Share December 13, 2007 Lager is the dominant beer type in SG. I prefer Ales over lager or pilsner. (Ales are more tolerant and easier to brew as it does not require very low temperature during fermentation). If you do have "fish" and "tanker" crowd, brew up very high alcohol beer, depending on malts and yeast used, some big beers can be had. For normal drinking, 4.5 - 5.5% alcohol is easily achievable. Again depending on your preference, you may wish to add more hops to bitter your brew, like the famous India Pale Ale from Brewerkz which is heavily hopped to give a hop nose and bitterness. I am sure the more you brew, the more you will want to create "that special" beer you can proudly call your own and serve with pride to your select friends, fishes and tankers alike!!! hick..hick...cheers! Layangman Neutral Newbie December 13, 2007 Share December 13, 2007 Of course if you can have lowered temperature, it will ferment better. Most newbies into brewing use large styrofoam boxes filled with cold water and frozen PET bottles (filled with water). I have used the above successfully before. Some of of my brewing kakis still does that. The styrofoam box (free from the backyards of NTUC and other supermarkets) must be large enough to fit a fermenter. You'll need to change the frozen PET bottles every 24 hrs to achieve mid-20s temp. I have now upgraded to a modified fridge with an external thermostat that maintains an even 20C throughout. Take it one step at a time. Just the starter kit, foam box and some elbow grease to start off first, then progress to better equipment if you feel that homebrew is SHIOK-TER than store bought beers. Everyone wants to look atas drink Chivas and Martel... machiam machiam only. talk abt Chivas ah, i have a bottle at home, tried to drink it on the rocks a few times but somehow just cannot get used to the "taste" leh, too strong. so usually mix w green tea or coke... really cannot understand how people seem to enjoy drinking hard liqour on the rocks leh.. anyone here can? really can enjoy like wine ah? Layangman Neutral Newbie December 13, 2007 Share December 13, 2007 Chivas is blended malt whisky, acquired taste:) Beer is made from same base ingredient - malt (derived from malted barley). Whisky and other hard liquors are usually distilled, hence the higher alcohol content. Beers and ales are only fermented, yeast can only go so far to convert sugars to alcohol, hence the lower alcohol. No, I don't work for any commercial brewery, just an avid homebrewer. He's got good selection of beers on tap for tasting. That'll give u an idea of how homebrewed beers taste like before you take that jump into homebrewing... Depending on the type of beer, combinations of malted barley, yeast, hops and water makes each beer distinctive. The reason why you lower the temperature is because yeast like that temperature. 28 deg C is the max they can actually tolerate. Furthermore, at that temperature and above. They go crazy multiplying like hell. Explains why when I make my bread, I go through this stage call retardation. First rise is at room temperature. Give or take 29-30 deg C. The dough rises like a volcano. Then you punch down and put the dough in the refrigerator overnight. Lots of strange things happen. One thing for certain, the dough keeps the heat so it cools down to the fridge temperature very slowly. At the meantime, the yeast munches on the starches and then realize things are getting colder. They start to behave in a strange way and starts doing things chemically different. New flavors are given off. Trust me. Once you make pizza or focaccia dough at home, Pizzahut and all their ilk don't measure up. Just like the Jack Daniels advertisement long time ago that I remember.
