I'm pretty sure most of us have eaten at Sushi Express before. While there are other more expensive and 'ATAS' sushi places out there, I find myself going back to Sushi Express every so often. Since my days in Poly, till my army days, till today, I still enjoy it a fair bit, but it was only until recently that I found out that it originated from Taiwan. The funny thing is, there were always signs that this sushi restaurant wasn't very Japanese. In fact, unlike many other restaurants serving Japanese cuisines here, Sushi Express doesn't even try to hide its provenance - instead of 'irasshaimase', the staff here exclaims '谢谢光临' (thank you for visiting, in Chinese), albeit in a sing-songy manner that makes you wonder what you've actually heard. And then there are the dishes. Over at Sushi Express, there are sushi with ingredients that you wouldn't normally think you'll find in authentic Japanese cuisine, like my favourite one with the mock abalone slice and some cheese on top. I've also seen seasonal dishes with Mala and sambal flavours... Okay, now, apart from pointing out my newfound knowledge of where Sushi Express is from, I have a question for everyone: What do you think of localised cuisine? I'm not talking about fusion-food restaurants where they purposely try to mix various cuisines, but rather something like Sushi Express, or our local kopitiam western food, or japanese/korean food stalls - what are your thoughts on them? For me, although they don't offer the authentic taste of how the dishes taste like in their home country, I find myself enjoying them a lot (I mean, being localised, these dishes are adapted to suit our local taste buds after all). So, what do you enjoy more? Authentic dishes, or altered dishes that suit our local taste buds? - Zhi Xuan
