frying is the hardest technique. Start from making soups/stews. They're idiot-proof. I have stew for breakfast everyday. U want recipe? hehe

Was wondering, since I am a soupy person, maybe I can just dump in the meat and low crab vegs plus add in fried lard(to bump up the fat content)

 

U think thats workable ? Easy to cook, minimal cleaning required.. [:p]

ah...so soups are good... ya, recipes please. hopefully not too difficult.

Thai-styled Soup.

 

1 lemongrass

handful curry leaves

1 small piece of yellow ginger

1 small piece of blue ginger

pinch of coriander seeds

pinch of fennel seeds

pinch of sea salt

cut red chillis with seed on.

2 bulbs of garlic with skin on.

pinch of black pepper seeds

cut parsley

half cup water

i small can coconut cream

 

put pork/beef bones to boil with all the ingredients except parsley. 3 hours over a low heat is good. Can do it overnight if u wish, no prob. Can even be pre-prepared and refrigerated.

 

Just before u want to eat, put whatever meat, fish, chicken....whatever food u want, inside to boil until it's cooked. Pour in coconut cream and stir well. Usually doesn't take long. Sprinkle with freshly cut parsley. Enjoy :)

I wished to have home cooked food too but My wife doesnt cook at all and I suck at it too. [laugh]

 

The other day,went to the supermarket to buy grill pan,anchor butter, ayam coconut cream,beef,bacon,pork belly, brocolli etc.

 

Then I cook, or tried too. What I did was funny. Fire up the pan, put anchor butter and the beef(without any seasoning/tenderizer). Result. Taste like s--t.haha bland.Btw, I bought the grass fed beef. $24.90 per 100 gram. Ex man.

 

Maybe I am too used to sauces, chili,ketchep,steak sauce etc, but since all these cannot be used, lan lan force down the tasteless meat.

 

Clearly unhappy with my lunch, open a can of ayam coconut cream... Hmm the taste is so good. Like eating Chendol ma I said to myself. Hmm maybe I can do this after all. BUT NO,cos after a couple of hours later, I felt terrible. I guess its due to indigestion of the coconut cream..i felt sickly.

 

For dinner, didnt dare to cook until i seek some help from chef friends... haha. Went to the food court to order roast pork and bah kut teh soup. Happy !!

 

Conclusion,

 

IMO, this new lifestyle will be pretty difficult to follow unless one knows or have people to cook for them. If like me n wife, constantly eat out, very difficult. In addition, where to find so many good meat out there? I mean commercially is just not viable. Imagine the food court western food stall selling grassfed beef for say $35, whose gonna eat it? .... I can't be eating at Mortons,Angus all the time right?

Lemme tell you something about my house. I only hooked up the gas to my *brand new* stove 3 years after we moved in.

 

Why didn't I? We NEVER cooked. We had 1 boiling pot that we used to boil water to make instant noodles when we got hungry at home. That's it. We ate out or bought in every single meal.

 

Why did I do it after 3 years? I decided to do something about my health at that point of time because my doctor told me squarely in the face that if I don't, I would probably die at 50.

 

The kitchen was the cleanest part of my house. The sink was used to wash mainly cups and glasses. The floor was always squeaky clean.

 

Well, not any more.

 

Talk about bad cook, you're looking at one. Many people here are much better cooks than me. But that doesn't stop me from eating well. I think the desire to want to attain good health has to be strong enough to compel you to make uncomfortable changes.

 

Changes in the tastes that you're used to.

Changes in the effort put in to make good tasting, healthy meals.

Changes in mindset.

Changes in habits.

 

Google will make you a good cook. That's the easy part. The hard part is wanting to make the effort to learn, and that has to come from how badly you want to lose your love handles and become healthy.

 

Enough of the pep talk. A little cooking tip now.

 

I'm no chef, but after 2 years of cooking steak, I find this to be pretty good tasting:

 

1) Make sure your Grassfed ribeye is cut into 1" thick pieces. Some people like thinner, but I feel that's the right size for home cooking when all you have is a small skillet.

 

2) Make sure it's at room temperature and dry before you cook it

 

3) Season right before you cook it, or after you cook it depending on your seasoning. I use only salt and pepper so I like to season it after cooking.

 

4) Heat up your skillet to a decently high temperature, a lukewarm skillet does not have enough heat to sear the meat

 

5) Melt a little butter on the skillet.

 

6) 2-3 minutes on each side, depending on how well done you like it. Do not flip it before the time is up. You can shift it a little, but do not flip it.

 

7) Eat

 

It does really require a change of habit to make it a point to eat home most of the time. That's how you can always eat Grassfed beef. But the result? Priceless.

cant resist samba, so cook samba fish again. But cant find stingray anywhere. End up cooking cod fish instead.

 

Not as tasty as stingy thou.........

Well..u can experiment on ur food with spices/herbs!

 

I clean the butts marinate, put in plastic bag for couple of hours then cook. Thats how i usually marinate my meats except beef steak.

 

I like to use the oven...n i will use a drip tray to collect the oil from my roasting to cook my fish for that meal.

 

A dash of salt plus some herbs better?

 

Do you guys air dry the CBS or let it dry in the fridge.

 

Do you normally let the meat taken from the fridge cool down to "air temperature" before you BBQ or steam them?

here u go, taken from the net.......simple but tasty enough to make me drool 2 days ^_^

 

6 oz. fresh red chilies (seeded and cut into small pieces)

1 tablespoon toasted belacan (Malaysian shrimp paste)

4 oz. shallots

1/4 teaspoon salt (or to taste)

2 teaspoons fish sauce

2 1/2 teaspoons sugar (or to taste)

1/2 lime (extract juice)

2 lemongrass (cut into thin slices)

4 tablespoons oil

 

Method:

Grilled Fish Sambal

Prepare the sambal by grinding chilies, shallots, belacan and lemongrass in a food processor. Make sure the sambal paste is well blended and smooth.

bro, your the man! haha. Your talking 2 cans of coconut cream right? coconut oil is too ex to drink like this haha.

Yup. But I add 4 tablespoons of coconut oil into each can for extra fat. Shiok and filling and makes me sweat.

 

When I wanna do a cut down, coconut oil is my weapon. I just drink it by the tablespoon. Damn filling and can't eat much after that. Confirm waistline shrink in 2 days.
