i see. well the candied winter melon imparts a bit of flavour. so rock melon flavour for yours. i think from the bak chang innards fillings, sometimes cannot tell visually if it is the winter melon or a lak pok. 

sweet bak chang ingredients - tau sah, winter/rock melon, coconut gula melaka

salty bak chang ingredients - salty egg yolk, hea bee, lup cheong (please chop up dont put 1 long piece), ang mo beacon

i think no much range of ingredients. add truffle or abalone or what not is no no to me.

Yes! Plus don't like all the peas, salted egg, lup cheong, fatty meat etc inside.

lucky your mum like salty bak chang.. usually we tie the sweet and salty bak chang with different color stings. wont mistaken the wrong type when we serve it.

For info there is no Nonya Bazhang. It's either Nonya zhang or Bazhang lol....

Dunno....I guess they can call it what they want... But i know from my conversation with people, it's called Nonya Zhang and Bak Zhang. In the past I also used to say nonya bak zhang and bak zhang until i was corrected. Actually when i saw salted chang that day i was confused also. I have never heard bak zhang being termed this way so that it's some special flavour. Then the person in front of me asked the cashier which one is the "normal bak zhang" then the cashier replied salty chang is the normal one. So i guess they have their own naming....

actually the womensweekly has a simple write up. only has hokkien bak chang, teochew bak chang, cantonese bak chang and nonya chang.

after reading then realise.. the dialect versions all young people dont know anymore.. including me.. sad

also we make own bak chang we put hybrid ingredients.. lol... what we dont like leave out.. no more signature from which group

Ya i know there are some ethnic variants for the generic bazhang but too complex already. For the fat meat, gaulat, salted egg yolk, i happy already....  maybe next year will go try those by 5 star hotel see how good, this year P2HA, no mood to go to town or even shopping center...

actually from young, i never call it "nyonya zang". 

it is always "new hia zang"

The fried carrot cake stall at Redhill FC (the one with mickey mouse on the signboard) sells nyonya zhang and bak zhang quite cheaply. $2 each. Not super great tasting, but super cheap. Used to be $1.50 last year before CB.

Ya la the sickening influenza @Discoburg I also never eat zhang so long now make me crave for some hahahaha! If only i had googled instead of looking at the forum i wouldnt be in this predicament....

I am happy to report i succeeded in resisting the $4.50 zhang sold by jian bo chee kueh cause they are NOT a ba zhang shope! =D
